French Beans with Chilli

The crunchy, nutty, spicy taste of the chicken dish is typical of Szechuan. The French beans are very hot-seed the chillis for a milder flavour. Menu serves 4-6.


French Beans with Chilli ()
    Materials:
    450 g (1 lb)Frech beans, topped, tailed and cut in half
    1 1/2 tablespoons vegetable oil
    2 garlic cloves, crushed
    6 chillis, finely chopped
    1 tablespoon soy sauce
    1/2 teaspoon sugar
    pinch of MSG
    1/2 teaspoon sesame oil


    Preparation time: 15 minutes
    Cooking time: 5 minutes

1. Blance the beans, then drain and refresh under cold running water.

2. Set a wok over high heat for 30 seconds, pour in the oil and wait until it is hot. Turn down the heat to moderate, then put in the garlic and red chillis and stir-fry until fragrant.

3. Put in the French beans and stir well. add the soy sauce, sugar and MSG. Stir-fry for about 3 minutes, until the beans are well seasoned. Sprinkle with sesame oil and serve.
