Green Mountain Summer Ale
- 4 lbs Briess 2-row pale malt
- 4 lbs malted wheat
- 1 tsp gypsum
- 0.4 oz Hallertau hop pellets (4.2%AA) (60 min)
- 0.2 oz Perle hop pellets (6.8%AA) (60 min)
- 0.15 oz N.Brewer hop pellets (7.5%AA) (30 min)
- 1 qt amber maple syrup (15 min)
- 1 tsp irish moss (15 min)
- 12g. pkg dry Edme Ale Yeast
- 1/2 cup maple syrup for priming
Combine wheat, barley and gypsum in 8 quarts of 130F water. Allow a
30 minute protein rest. Add 4 quarts 200F water to raise temp to 150F.
Hold for 15 minutes. Raise temp to 158F and hold for 30 minutes.
Mash out at 168F for 5 minutes. Sparge with 170F water to collect
6 - 6 1/2 gallons. Boil for 90 minutes.
