Squash Stew


It does sound a little peculiar. But what else are you going to do with the squash, bake it? again? This is a fine alternative.

half of a butternut squash, or the moral equivalent.
water
1/2 c. split peas (preferably yellow)
3/4 c. rice
3/4 c. lentils
1 onion
a little garlic
1 or 2 cloves (no more -- trust me on this)
Cube the squash. Chop and saute the onion and garlic. Add rice, peas, cloves, possibly the squash (you may wait, depending on how squishy you want the squash), and enough water. Bring to a boil; simmer for 15 minutes. Add lentils, and cook until done. I add some other spices, but they're not codified.

Variations: I want to try it with baby limas. This would mean tweaking the timing a little.
