Garam Masala

Makes 2 tbsp

1.5 tbsp black peppercorns
0.75 tbsp cumin seeds
1.5 tsp whole cloves
4 large brown cardamom pods
2 inch cinnamon stick
half of a whole nutmeg
2 star anise

Roast all the spices (put them into a frying pan over a medium heat and cook, stirring, until they turn brown). Grind them to a fine powder and store in an airtight jar in a dark cupboard.
