CloverKill Honey Ale
Modified from Papazian's Rocky Racoon Honey Lager
Ingredients:
- 3.5 lb Laaglander plain light DME
- 2.5 lb clover honey
- 1.5 oz Cascade Hops, 4.4 alpha - boiling
- 0.5 oz Cascade Hops - finishing
- 1 pkg Edme ale yeast
- 1.0 cup DME for priming
O.G.: 1.053
F.G.: 1.020
Procedure:
Added DME, honey, and boiling hops to 1.5 gallons boiling water. Boiled
1 hour. Added finishing hops for the final 2 minutes of boil. Mixed with 3.5 gallons of cold water in
fermenter, cooled to 76F, and pitched yeast. Bottled in 1 week.
