Mango Beef in Paper ()
    Materials:
    225 g (8 oz) fillet steak, cut into 12 slices
    1 tablespoon oyster sauce
    pinch of salt
    2 teaspoons cornflour
    1 tablespoon sugar
    1/2 teaspoon sesame oil
    pinch of freshly ground white pepper
    12 thin slices root ginger, peeled
    1 mango, stoned and cut into 12 slices
    2 spring onions, cut into 12 pieces
    1 sheet cellophane, cut into 12 squares, or 12 small oven roasting bags
    600 ml (1 pint) vegetable oil
    lettuce leaves, to serve

1. Place the beef slices in a bowl with the oyster sauce, salt, cornflour, sugar, sesame oil and white pepper. leave to marinate for 10 minutes.

2. Place a slice of beef on each sheet of cellophane. Top with a slice of ginger and a piece of spring onion and finish with a slice of mango. Wrap up the cellophane to form an airtight parcel, or tie roasting bag at the top.

3. heat the oil in a wok to 180 degree C (350 degree F), or until a cube of bread browns in 30 seconds, and put in the parcels. deep-fry for about 2 minutes on each side, depending on how you like your steak, then remove and drain on paper towels.

4. Serve immediately on lettuce leaves.
